Blueberry Oatmeal Snack Bars

Packed with oats, bananas, and other tasty ingredients, this is your new go-to snack.

Prep Time: 15 Minutes

Serves: 12

Ingredients

  • 3 ripe bananas, medium sized
  • 2 large eggs
  • 1/4 cup honey
  • 1/4 cup light brown sugar
  • 1 tsp vanilla extract
  • 2 cups traditional oats
  • 1/2 cup whole wheat graham flour
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1-1/2 cups fresh blueberries, cleaned and dried

Preparation

Preheat oven to 350℉.

Grease an 11"x13" baking dish and set aside.

In a bowl, mash all 3 bananas. Add eggs, honey, brown sugar, and vanilla and combine all ingredients.

Add in oats, flour, cinnamon, baking soda, salt, and blueberries and mix to combine. Pour batter evenly into the baking dish.

Bake for 30 minutes until bars are set. Let cool slightly before cutting.

Cook's Notes

Sub in raspberries or strawberries to change up the recipe, if you'd like. Or, make it more of an indulgent treat by adding a lemon glaze.
